Citrus Smoked Red Meat Trout with Avocado and Yellow Bell Pepper Cream

Sauteed Foie Gras with Persimmon Chutney and a Pomegranate-Port Wine Reduction

Slow-Braised Petit Beef Short Rib in a Cabernet-Black Trumpet Mushroom Sauce

Fire Roasted Autumn Squash Bisque with Wild Rice, Fennel and Sun-Dried Tomato Pesto

Chef's Select Autumn Greens with Spiced Walnuts, Dried Cranberries, Roasted Pears, Laura Chenel Goat Cheese and Cider Vinaigrette
