Appetizer Selection

Spring pea soup with bacon bits, creme fraiche and garlic croutons

A dozen spring vegetables marinated with lemon, marjoram and extra virgin olive oil in a crispy Parmesan cheese basket

Grilled chicken salad with romaine lettuce, avocado, jicama, crispy tortilla and charred tomato-cilantro vinaigrette

Baby tomato risotto with spring zucchini, opal basil and clams

Grilled calamari stuffed with ratatouille vegetables and topped with green olives, toasted almonds and saffron-scented smoked pepper vinaigrette

 

Entree Selection

Short stack of corn pancakes with vanilla roasted peaches, sweet creamed corn, hazelnuts and pure maple syrup

Brioche French toast stuffed with caramelized bananas, toasted walnuts and served with cinnamon butter and 'Bananas Foster' syrup

Two poached eggs on a potato galette with smoked salmon, red onion, chives and lemon creme fraiche

Radiatore with artichokes, wild mushrooms, English peas and white wine sauce

'Steak and eggs' - a petit filet mignon with scrambled eggs, garlic spinach, tomato fondue and hollandaise sauce

Sauteed Northern halibut with grilled eggplant, zucchini, a garbanzo bean cake and basil jus

 

Dessert Selection

Rose infused white chocolate mousse cake with braised berries

Turtle in a box

Fresh strawberries with an almond teacake

Selection of ice cream and sorbet (vanilla, chocolate-chocolate chip and raspberry swirl ice creams and coconut, lemon and peach sorbets)
